Dishes are meticulously crafted with exclusive ingredients, showcasing forgotten ingredients and techniques, underscoring a profound respect for authentic flavors and Italian gastronomic culture.

In 2005, chefs Fabio Pisani and Alessandro Negrini, along with Stefania Moroni, took over as owners. Their dedication mirrors that of Aimo and Nadia, ensuring a dynamic and balanced culinary experience.
